Huile jaune dorée toute en finesse, très longue en bouche dominée par des arômes de plan de tomate, et d'amandes fraîches, camomille, agrumes. Elle est fluide, elle picote au fond de la gorge qui reflète la fraîcheur des olives au moment de la trituration. Huile ayant une amertume et une ardence médium.

LES ACCORDS AVEC LA CUISINE: C'est l'huile idéale pour l'assaisonnement, avec le cru. Elle se marie avec tous les légumes, les pâtes ou le riz. En cuisson sur un filet de poisson à la vapeur, en papillote ou en grillade Sur une viande blanche, ou une viande rouge grillée.
